No menu, no à la carte ordering, Le Panier offers a creative blind culinary experience using seasonal ingredients and adapts to your allergies (within reason).

Trained in renowned gastronomic establishments in France and Switzerland, Chef Aurélien Martin refined his craft through travels in Australia, New Zealand, and Canada. From these experiences, he developed a cuisine open to the world, inspired by Mediterranean terroir and seasonal produce. For him, every dish is a meeting between French savoir-faire and creative boldness.

Alongside the Chef, Marie Lacoue designs the restaurant’s culinary journey each month.

Creative and passionate, she also curates the pairings that elevate each stop — whether it’s a carefully selected wine or a house cocktail crafted to extend the experience.

Seasonal Ingredients

Every product is carefully selected. The Chef chooses fresh, seasonal ingredients with special attention to quality and flavor accuracy. Most of our primary products come from the Flower Market of Nice on Cours Saleya, a vibrant place where colors, scents, and textures inspire his creations. This patient and precise work gives birth to a living cuisine, rich in the emotions and abundance of the seasons.
